Buendnerfleisch is Alpine style air-dried beef. A premium, lean choice beef top round, seasoned and pressed, then air-dried in the time-honored traditional Swiss style. (French: viande de grison). Comes whole in a approximately 2.5lb piece. Served best when sliced paper thin. Ask your local butcher to cut the meat to the desired consistency.
